Lobster Tails with Garlic Lemon Butter Recipe
Ingredients:
4 lobster tails, 5-6 oz each
1 Tbsp fresh parsley, finely chopped (plus extra for garnish)
2 garlic cloves, minced
1 tsp Dijon mustard
1/4 tsp salt
1/8 tsp black pepper
1 1/2 Tbsp olive oil
1 1/2 Tbsp lemon juice
4 Tbsp butter, divided
Directions:
Preheat broiler to high and position the rack so the lobster tails are 6 inches below the heat source.
Using kitchen shears, cut through the top shell of each tail to the base. Crack the underside ribs to open the shell, lift the meat, and rest it on top.
Combine parsley, garlic, Dijon, salt, pepper, olive oil, and lemon juice in a small bowl.
Arrange lobster tails in a roasting pan, coat evenly with marinade, and top each with 1/2 Tbsp butter.
Broil for 10-11 minutes, ensuring the meat is opaque and the internal temperature reaches 145°F.
Transfer to a platter, garnish with parsley, and reserve the pan drippings.
Melt the remaining butter with the drippings in a saucepan and serve as a dipping sauce or drizzle over the lobster.
