Ingredients:
- 12 large shrimp, peeled and deveined
- 2 8-10 oz filet mignon or ribeye steaks
- 1 tbsp fresh parsley, chopped
- 1 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- Salt and freshly ground black pepper
- Juice of 1/2 lemon
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp paprika (optional)
- 1/2 tsp cayenne pepper (optional)
- 2 sprigs of fresh thyme (optional)
Instructions:
1. Prepare the Steak:
Pat the steaks dry with paper towels and allow them to sit at room temperature for about 30 minutes. This step ensures even cooking.
2. Season the Steaks:
Rub both sides of the steaks with olive oil. Generously season with salt, pepper, garlic powder, and smoked paprika. The spices will enhance the flavor as they sear.
3. Cook the Steaks:
Heat a cast-iron skillet over medium-high heat until it’s hot. Add 1 tablespoon of butter and allow it to melt before placing the steaks in the skillet. Sear the steaks for about 3-4 minutes on each side for medium-rare, adjusting the time based on your desired doneness. In the last minute, add the remaining butter and thyme to the skillet, basting the steaks with the melted butter. Once cooked, remove the steaks from the skillet and cover loosely with foil to rest for 5-7 minutes.
4. Prepare the Shrimp:
While the steaks are resting, place the shrimp in a bowl and toss them with olive oil, minced garlic, smoked paprika, cayenne pepper, salt, and pepper. Mix well until the shrimp are evenly coated.
5. Cook the Shrimp:
